Yannick Alléno's fascination with Japanese culture and cuisine began at the age of 20 during his three-week trip to Tokyo, Saporo, and Kyoto, where he discovered new flavors and a newfound love for Japan. His internship with retired Michelin 3-star chef Hachiro Mizutani was a fundamental moment in his journey. In late 2016, Alléno's encounter with Yasunari Okazaki reignited his passion for promoting Japanese sushi in France.
