The fecal matter from these animals contains the coffee beans which are collected and processed. During digestion, the civets secrete enzymes that give the coffee a distinctive and delicious taste. Kopi luwak coffee thus also goes by the name civet coffee.

The Arabica coffee beans are consumed by elephants. During the digestion process, the elephant’s stomach acid breaks down the proteins in the beans. This process helps create a uniquely robust flavor.
